Ethylene is a natural plant hormone that acts like a tiny messenger that fruits release as they mature. When a fruit produces ethylene, it triggers a series of changes: green bananas turn yellow, hard avocados become creamy, and tart apples grow sweeter. This invisible gas can even spread from one fruit to another, which is why putting a ripe banana in a paper bag with unripe avocados can speed up the ripening process!
